Cooking and stuff

Well hello!! This week I've been whipping up some yummy treats, so I thought I'd share!! I subscribe to a website called E-Mealz. It's wonderful! It's southeast based, but they also include Wal-Mart and a general category for any store. They base a weekly menu for your family based on sales at your store. They also provide coupon match ups. You can do specialized diet plans as well such as weight watchers and low carb. I digress. I will share couple of yummy meals from them first. Both of them use Curlys BBQ and it is DELICIOUS! They were BOGO at Publix this week - score!

Meal 1: Pig in the Patch Baked Potatoes with salad
4 - 6 large baking potatoes
3 oz pkg bacon bits
18 oz tub BBQ pork, heated (use Curly's brand - linked above)
8 oz pkg shredded 2% cheddar cheese
16 oz carton FF sour cream
Reduced Fat Butter

Place washed potatoes in crock pot & cook on low 6 hrs.
Garnish potatoes with bacon, pork, sour cream, cheese & RF
margarine.
Sidenote - I baked my potatoes in a 450 degree oven for 1 hour and they were great.

Meal 2: BBQ Chicken Pockets with cole slaw
18 oz tub BBQ chicken, slightly warmed
(FF butter spray)
1 or 2 - 13.9 oz cans RF crescent rolls

Separate crescents & form each into a rectangle. Place each
into sprayed muffin tin. Spoon ½ c BBQ chicken into each. Pull 4
corners together seal. Spray top w/ FF butter spray. Bake @
350 for 20 min.

I also did some baking and canning this week! I've never canned before, but I had about 50 ripe peaches that I needed to do something with. After some searching online, I found a really good tutorial video. It was suprisingly easy! Overall I got about 7 pints of peaches that will be good for a year!

I also had some ripe bananas that I wanted to put to good use. I didn't really want banana bread so I went with this Banana Crumb Muffin recipe that is absolutely delish!!!
